French Chicken Cooker

THE UNUSUAL CHICKEN COOKER...

Roasting your chicken standing up is great for even cooking and a all round golden finish, not to mention the flavours dripping on to the vegetables below. 

The idea is to place your chicken on the pick, allowing all of it's juices to fall into the sunken dish below, giving your vegetables a wonderful caramelised seasoning.

Enamel interior. 

Stoneware exterior. 

Oven Safe.

This dish has been tried and tested in my kitchen. You'll need to let the stoneware heat slowly to avoid thermo-shock.

Place your vegetables in the base of the dish, add your seasoned bird to the spike. Set your oven shelf low to allow space for the height of the bird and start the dish in the oven at 50 degrees, taking 1 hour to gradually heat to 180 degrees. Cook your chicken for further 45-60 minutes at 180 degrees, before allowing the chicken to rest, then serve. This timing is based on a number 16 bird. And my results were stunning. 

For small chickens, simply reduce the cooking time at 180 degree from 45 minutes to 30 minutes.
